So, plans changed a bit for this week. Joel was able to work some hours at my parents house finishing up some cabinet-refacing in their bathroom and earned us some extra cash. SO with the extra dollars I decided to spend some extra money on stocking up the meats in the freezer and a few other convenience items.
I went to Walmart on Monday and spent $25 on our weekly meal ingredients. Our menu for the week also changed and here is what we ended up with:
Monday - Asian Chicken Salad
Tuesday - BBQ Chicken Quesadillas w/Corn and Edamame Bean Salad
Wednesday - Orange Beef w/Cilantro Rice
Thursday - Repeat Asian Chicken Salad (bought double ingredients since it was meant to be a potluck contribution)
Friday - Fend for yourselves!
Saturday - Fend for yourselves!
Sunday - Breakfast Scramble Casserole
With our weekly meal ingredients tackled as well as some frozen burritos for Joel's go-to lunches if we have no leftovers, sponges, and some snack-crackers for Sarah, I only had some stock up items to purchase which is where Costco came in.
Ground turkey is about 12 cents cheaper per pound at Costco than Walmart so I decided to splurge on their huge multi-pack since I'd spend it eventually anyway. Frozen chicken breasts sell for exactly the same sale price Albertson's has this week so I bought the 10 pound bag (I was planning on buying 5 pounds at Albertson's anyway and this way I didn't have wrap my own chicken and freeze it.)
Costco also provided me with a huge stockpile of tortillas (which are completely versatile from fajitas to pbj's to breakfast tacos), veggies (peppers, cuc's, celery), and I did SPLURGE on a huge bag of chips ($3) and some salsa (on sale for $3) for Joel.
So grand total for our groceries this week WAS $96. But I consider it a fantastic spend because I should need to buy milk for two weeks and meat for probably two months. Next week I will plan my meals around the veggies I bought as well as the meats I have stocked up. I'm working on planning meals for the month of July...I am halfway through so I'll keep ya'll posted on that.
I am also EAGERLY awaiting the arrival of my new pressure canner parts so I can get to canning dry beans (those sell for 68 cents a can at Walmart and I buy them frequently). Meat, and tomato products are also on my list for canning!
Speaking of canning - our local Boy Scout troops sponsor a fruit selling endeavor every summer. Last year I got 2 boxes of peaches and 1 box of apples (20-25lbs each) but this year I'm going to try and can 3 boxes peaches, 1 box of nectarines, and 2 boxes of apples for applesauce etc.

A girl after my own heart...
I love comparing prices at different stores, clipping coupons, and seeing the bottom of the receipt to see how much I've saved. Josh thinks I'm crazy, but hey I'm saving or family money. It's almost like a fun game where the prize is the money you saved in your pocket!
Lissa - it's so true!! I figure that since I don't have a job outside of the house, every bit of money I save is money we earned...And who doesn't love a fun challenge!? You should look up www.5dollardinners.com That lady is amazing!!
Debbie - I love Tuesdays when the coupon circulars come! :D
Will you give me a shopping/saving lesson when we come up later this month?? I think I need it, since we are po' folks and also need to save every penny we can.
