I've been looking to use up all my 'extras' in the cupboard and have been doing pretty well until I recently moved a box of something and was surprised by what I saw! THREE, yes three, open bags of mini-marshmallows. Why I ended up with three open bags I'm not sure. I know it had to do with my Christmas gift giving and treat making but come on, THREE? I also had half a bag of chocolate chips that were just too easy to dip my hand in for a sneak peak. In addition I also noticed I had about a third of a box of stale Walmart brand rice krispies. And thus the super duper yummy treat of the day was born. Sarah was also very happy because 1) I got her up from rest time to have her help me and 2)She got some one on one cooking time with her Mama. We were both happy campers. So here's what we ended up with:
PeanuttyChocoMallowKrispies
1 large scoop of peanut butter (1/2 to 3/4 cup)
1 half bag of semi-sweet chocolate chips
1 half bag (I think you could use a whole bag and it would be even better) mini marshmallows
3 Tblsp Butter
3-4 C Rice Krispies
In a large pot melt the peanut butter, chocolate chips, marshmallows, and butter until soft and gooey. Remove from heat and stir in rice krispies. Grease a 9X13 pan and spoon the rice krispies concoction into pan and flatten with the back of the spoon. Let cool at room temperature then cut into squares and enjoy!! :)

Sounds so good! Like no-bake cookies and rice crispy treats combined! Could a treat be more meant-to-be?
I'm so bent on losing my 10 pounds that all I see is hours on the treadmill trying to burn it off. :(
