Recipe For Success?


I had planned on making my Quinoa with Black Bean recipe on Saturday night, and did so successfully. The recipe will be at the bottom of this post. I made it to share at our ward linger longer. Normally for the linger longer dinners I do something like crockpot meatballs or crockpot lil' smokies, nice and fattening for the belly. Everytime I make them my crockpot is empty so all I need to do is rinse it out and pack it up. Not so with my healthier alternative. I'm not sure if people just didn't know what it was, or if people come to these functions to splurge on caloric intake. I had about half of the serving bowl left of the stuff, which is fine because I love it and Joel likes it, so we'll definitely eat the leftovers.
So for those of you who are interested in something a little bit different - here's the recipe. I got the basic recipe from allrecipes.com but I have customized it to fit my tastes. :)


Quinoa and Black Beans


Saute 1 onion and 3 cloves garlic in 1tsp olive oil until softened.

Sprinkle 1 tsp cumin and 1/4 tsp cayenne pepper in the mix and add 3/4 to 1 cup quinoa (you can soak the quinoa for 10 minutes to make it a little softer, but I like the texture with no soakage)

Pour in about 1 1/2 cups chicken broth to cover

Bring mixture to boil and simmer for 20 minutes

Add:

1 cup frozen corn kernals

1 orange pepper (or any combo of colors you'd like)

2 cans black beans rinsed and drained

1 can diced tomatoes rinsed and drained

Leave on med-low heat for five more minutes

At the end add 1/2 chopped cilantro, mix and serve!


This is great hot, room temperature, or cold, with chips, tortillas or anything else that sounds good.
