A Successful Recipe and a Helpful Hint

So I tried a new recipe tonight. I don't think I have ever even had egg salad before but Joel had mentioned it and I thought I'd do a little searcharoo for a good recipe. I had 3 dozen eggs to use up in the next week or so, we have some good friends with chickens - yummy organic eggs! Joel doesn't like the texture of hard-boiled eggs so that was the reason behind the suggestion. I don't know what goes into "normal" egg salad recipes - but here's the one I found:

7 hardboiled eggs, chopped
1-2 dill pickles (I used halves, chopped, and they were very large to start)
1 whole cucumber, peeled, seeded, and chopped
2-3 Heaping spoonfuls of mayo
1-2 Spoonfuls of Mustard
Salt and Pepper

Just combine all the ingredients and enjoy! I made mine up and put it on potato bread, toasted. Sarah also really loved it. In fact tonight she had some cold black beans and half an egg salad sandwich. It almost made my stomach churn to watch her eat all of that but she seemed very content to enjoy it!

And now here's my helpful hint - I don't have a garbage disposal (it's my personal pet peeve - it will be a requirement for our next house, or possibly when we remodel) so when peeling my eggs I had to keep shaking my wet hand over the garbage to try and get the shells off my hand. Fortunately I just happened to have a bowl directly below the shell removal process in the sink and I noticed that all the shells were sinking straight to the bottom. So as the water ran over the egg, it carried the shells to the bottom of the bowl and I didn't have to worry about all the shells getting into the drain catch. So if you need to peel eggs, and you run water over them while you do it, put a bowl under the stream of water while you peel and you are set!! :)

I learned this helpful hint of running cold water over hard boiled eggs because it keeps the shell from sticking to the egg. I don't have a recipe for egg salad, I have been making it for years. I after peeling the eggs and mashing them, I add mayo, salt and pepper then maybe Mrs. Dash. I have never cared for pickles of any kind.
