My friend Kristi reminded me that I have yet to post my recipe for the bread pudding I enjoyed last week. So I'll make good on my promise now...this recipe I got from Allrecipes (where I get most of my goodies) but I altered it quite a bit to suit my own needs.
Apple Bread Pudding
1 VERY Stale Baguette French Bread
2 T Butter, melted
4 Eggs, beaten
2 C Milk
1/2 C Sugar
1 t Cinnamon
1 t Vanilla
2 C Dehydrated Apple Slices
First, soak the apple slices in hot water while preparing the rest of the ingredients.
Cube the baguette and place in an oiled (or sprayed) 8in or 9in square baking pan. Drizzle the melted butter over the top of the bread. Toss gently to mix. In separate bowl add eggs, milk, sugar, vanilla, cinnamon, and drained apple slices. It's okay if the apples haven't yet totally hydrated. Mix wet ingredients and pour over bread. Toss lightly to incorporate apples with the bread. Cover with foil and let sit in fridge overnight.
The original recipe did not need to sit overnight but I wanted to prep mine ahead of time so I put in the fridge for 12 hours. You pick what works for you!
Preheat over to 350 degrees. Bake for 45 minutes or until center is JUST set. Enjoy with a nice cold glass of milk, or pour milk over the top. This is VERY sweet so it could also make a nice dessert with some ice cream or whipped topping. :)
I tried this easy, cheap, and tasty recipe tonight - It was a hit! I also REALLY loved it since I love corn dogs. You could possibly make this less fattening too by only using egg whites, non fat milk, and light or veggie hot dogs.
Corn Dog Muffins
2 Boxes Jiffy Cornbread Mix
2 Eggs, beaten
2/3 C Milk
6-8 Hot Dogs, sliced
3/4 C Cheddar Cheese, Shredded
Preheat oven to 450 and grease a muffin tin. Stir together Jiffy Cornbread mix, eggs, and milk in a medium bowl. Let sit while you slice the hot dogs. Place one spoonful of cornbread mix into each muffin hole the top with 5-6 slices of hot dog. Then cover with a small spoonful of mix and top with a bit of cheese. Bake 10-15 minutes until muffins are lightly browned and a toothpick comes out clean in the center. :) YUMM-O.
